These cookie dough balls look innocent enough, but they were by far the hardest-to-eat thing I've featured on my channel so far. For you see, they are packed with peanut butter. And, if you've ever had a spoonful of peanut butter, you'll know exactly what I'm talking about here. Hard to chew, sticks to the roof and sides of your mouth like glue (hey, I'm a poet!) and incredibly dry without any liquid lubrication. (Luckily I had some soy milk on hand to help with that!) I also rolled these balls into a much, much larger size than recommended because I am crazy. It's no wonder I couldn't eat more than 2-and-a-half of them! The sweetness and richness were a little too much to bear. (Cue violins playing in the distance.) Setbacks aside, these cookie dough balls were actually incredibly delicious and very easy to make. You need only 4 ingredients: peanut butter, almond meal, chocolate chips and maple syrup. And being somewhat healthier than your average cookie dough, I don't feel quite as bad for stuffing my face with them.
