Today I'm eating a delicious and refreshing bowl of dragon fruit nice cream topped with granola, coconut and chocolate syrup. If you've never heard of 'nice cream' before, basically it's like a healthier version of ice cream - made from frozen fruit! When blended, the frozen fruit turns into a creamy soft serve-like texture — just like ice cream! How this magic works, I’m not entirely sure. (I believe it has something to do with the starches in the fruit?) The important thing to note is that you will need a high-speed, high-powered blender (I have a Vitamix) to make it. Blenders with less speed and less power will not be able to cope with the force needed to break down the frozen fruit. (Seriously, do not try this with anything but a high-speed, high-powered blender or you will break the blender!) To make nice cream simply add a touch of liquid (either water or plant milk) to cover the bottom of your blender then add your frozen fruit of choice and any other flavours/ingredients you wish to include. Blend until a soft-serve like consistency is achieved. You can add more fruit/liquid if required. Just keep an eye on how it blends and make adjustments to get the right consistency. For the nice cream in this video, I've used approximately 200 grams of pink dragon fruit and two medium-sized bananas as my base and I've topped it with granola, shredded coconut and chocolate syrup.
