Hi my hungry dinosaurs, it's food again! Today I'm having a Mediterranean orzo salad! Wait, what's that? Is it rice or pasta? :D Orzo or Kritharaki is actually Greek pasta which looks like rice. And it's so good! I used to have orzo quite often when I was younger and I loved it so I decided to make a pasta salad with it today. I really like the combination of orzo, fresh spinach and oily tomatoes plus artichokes. So so good! I can definitely recommend this recipe. 😻 It's perfect for these hot summer days.
