When I saw these giant pasta shells at my local green grocer (and confirmed they were sans egg) I knew I had to get them for a video. So I Googled a few recipes for stuffed pasta shells and this was the one that most took my fancy. I simply veganized the recipe by using a plant-based mince (the Funky Fields brand from Woolworths) and some shredded vegan cheddar (the Bio brand from Coles).
