On today's menu: a vegan version of my Czech dad's 'famous' goulash. I say 'famous' because we used to eat it a lot over the years and I always enjoyed his home-cooked version much more than anything from a restaurant. Heck, even the restaurants in Prague did not compare! Maybe I just love my dad a lot, hehe. Here's how to make the recipe (Mr. Herbivore made it): ~ Use equal quantity vegan 'beef' chunks to onion. (Note: the vegan meat I used was called 'vegetarian beef chunks'. Unfortunately I cannot remember the brand name, but I got it from the vegetarian freezer section of my local Asian supermarket.) ~ Dice your onion and sauté it in some oil in a pot. While sautéing, sprinkle in a good amount of paprika, a little bit of pepper and chili flakes, and salt to taste. Once the onion is softened (but not brown) add your veggie 'meat'. ~Stir to coat the veggie 'meat' in the onion and oil then pour enough boiled water to cover the 'meat' and onion. Turn heat to low and cover your pot. Let it simmer for 20 minutes or until you're happy with the consistency of the sauce. If the sauce is too thick add a little more boiled water, if it's too thin let it reduce a little more. Traditionally I'd eat this with knedliky (bread dumplings), but on this occasion I opted for some pane di casa bread with vegan butter. Dipping the bread in that goulash sauce was heavenly!
