Welcome to BiteBuz! Today we're making a delicious and vibrant street-style pav bhaji that tastes just like the one from your favorite food stalls or restaurants — but from the comfort of your home. No added colors, no complex tricks — just pure flavor! Ingredients: For Boiling Vegetables: * 3 medium potatoes (peeled & chopped) * 1 cup green peas * 2 carrots (similar quantity to potatoes) * 1 capsicum (chopped) * ½ cup cauliflower * 2–3 cups water * Salt – about 1 tsp (or less) For Masala Base: * Oil – 2 tbsp * Butter – 1–2 tbsp (as per preference) * Ginger-garlic paste – 1 tbsp (or freshly chopped) * 1–2 green chillies (finely chopped) * 2 onions (finely chopped) * 2 tomatoes (finely chopped) * Salt – 1 tsp * 1 small bowl grated beetroot (for natural red color) * Turmeric – 1 tsp * Red chilli powder – 1 tsp (adjust to taste) * Red bell pepper – chopped (optional but adds nice color) * Pav Bhaji Masala – 2–3 tsp * Water – as needed * Fresh coriander – chopped * Butter – more, for final taste boost For Pav: * Butter – as needed * Turmeric – ½ tsp * Red bell pepper – chopped * Coriander / coriander powder – optional Method: * Add all vegetables to a pressure cooker with water and a little salt. Cook for 3 whistles on high flame. * Meanwhile, in a separate pan, heat oil and butter. * Add ginger-garlic paste and green chillies. Sauté well. * Add finely chopped onions and cook till soft (light brown). * Add chopped tomatoes and some salt to help them soften faster. * Mix in grated beetroot for natural red color and let it cook on low flame. * Add turmeric, red chilli powder, and bell pepper. Stir well. * Add pav bhaji masala and a splash of water to prevent burning. * Cover and cook for a few minutes until the masala is aromatic and thick. * Mash the boiled vegetables and add them to the masala. Mix well. * Adjust water for desired consistency and simmer for 8–10 minutes. * Add butter and chopped coriander towards the end. To Prepare Pav: * In a pan, melt some butter. * Add turmeric, chopped bell pepper, and coriander for flavor. * Toast pav buns on both sides till golden and buttery.
