Today I'm teaming up with my gorgeous friend and fellow vegan, CookandEat ASMR! We're both making and eating a vegan sausage pasta dish. YUM! I've decided to go with a pizza-flavoured pasta bake (keep reading for the recipe) which was seriously so delicious that I want it again right now! CookandEat ASMR's video: • Video So, I didn't plan for this to be a pizza-flavoured pasta bake. It kinda just worked out that way. Instead of looking for a recipe online like I usually do, I thought I'd just chuck a bunch of my favourite ingredients together and pray that it tasted good! It did, and it wasn't until I had some of the leftovers the following day that I realised how much it reminded me of pizza. Looking back at the ingredients I used, it's easy to see why. ★ Recipe (note: with the exception of a few ingredients, no measurements were taken) • Cook 500 g of the pasta of your choice. • Add the following ingredients (chopped to your preference) to the cooked pasta: red onion, garlic, basil, chilli flakes, olives, cherry tomatoes, sun-dried tomatoes, cooked vegan sausage and some canned 5-bean mix. • Prepare your creamy cashew sauce (blend 1 cup raw cashews, 2 cups liquid vegetable stock, garlic powder, lemon juice, salt and pepper in a high-speed, high-powered blender) and add it to the cooked pasta. • Give the pasta mix a good stir to combine everything, then place the mixture into an oven-proof dish and cook it in the oven for approximately 10 minutes on 200ºC. This is more to heat the mixture and thicken the cashew sauce rather than ‘cook’ the meal (since it's already cooked). • Add your choice of garnish to serve. (I used spring onion and crumbled vegan cheddar). I cannot wait to make this again! I'm going to make it even more pizza-like next time by adding tomato to the creamy cashew sauce, pineapple, capsicum (red peppers) and a special sautéd onion/sugar/dried herbs concoction that Mr. Herbivore often makes for our home-made pizzas.
