Hi my hungry dinosaurs, it's food again! Today I'm having creamy and crunchy Mexican street corn salad! I really wanted to have a Mexican dish on this channel that's why I made this straightforward corn salad to begin with. It was really creamy due to the vegan butter and mayonnaise, and the seasonings added a great spice to it! I omitted crumbled cheese since I didn't have any vegan cheese alternative around but it was perfect as it was! I think this Mexican street corn salad goes great with a barbecue in summer!
