This dish is quite possibly my most favourite thing to eat in the whole wide world! Words cannot describe how utterly delicious I find it. Best of all, it was Mr. Herbivore who ‘invented’ it which makes it that much more special to me. (Well, he didn't ‘invent’ invent it — I'm sure someone out there has probably already combined these flavours, but you get my what I mean.) Here's how to make it (note: I made a huge batch, you can halve or quarter the recipe): ★ Ingredients ★ 15 white potatoes (I left the skin on, but you can peel it if that's what you prefer) 4 scallions (plus some more for garnish, optional) 1 cup white sugar ½ cup soy sauce ½ cup water Generous pinch of pepper 1–2 tablespoons curry powder, depending on how strong you want it ¼ cup oil (for frying potato) ● Dice potato into small cubes. ● Add potato and sugar to the stove and fry in oil on medium heat for approximately 30 minutes (or until soft). Stir every few minutes to prevent the potato from sticking to the bottom of your frying pan/pot. ● Add all other ingredients and cook for another 5–10 minutes or until the sauce has a thickened consistency. ● Serve with fresh scallion if you desire.
