It only made sense to make this dish after yesterday’s tomato video. I mean, what else was I going to do with ALL those tomatoes? To make the sauce for this meal, I fried off some onion, garlic, chilli flakes and Italian herbs in a pot, then added a bunch of chopped tomato. Once the tomato had cooked down down a little, I added some cashew cream (blended cashews with water) for the creamy component and chucked in some frozen chopped spinach towards the end of the cook. I paired the sauce with a pretty and curly fettuccine, and the result was amazing! As always, thank you for watching ❤️
