Hi my hungry dinosaurs, it's food again! Today I'm having spicy Tofu in Purgatory which is the vegan version of Shakshuka - a North African dish which is actually made with eggs. You can make this dish as spicy as you like and enjoy the soft cooked tofu. It's very delicious! I enjoyed it with some jasmine rice but you can also definitely eat it with some bread to mop up the juice.
