NOTE: I apologize for the shaky table while I was smashing sugar lumps. I was so much into the zone that I didn't even notice I was rocking the entire world. 🥧🥧🥧🥧🥧 Now, hear me out. Yes, the title may sound a bit...icky. Gross, even. That's what I thought, too. But this pie is THE BEST! I don't even like pie, and I'm telling you, it's fantastic! It's so easy to make, too. Just combine these ingredients and bake in a pie crust at 350F: 1/2 cup cooked pintos (I just used canned pintos) 1 teaspoon vanilla 1/4 cup nuts (I used chopped pecans) 2 eggs (beaten) 1/2 cup coconut 1 stick margarine (but I used butter) 1 1/2 cups sugar *** And that's it! I baked mine for about 25 minutes, but it may be different for you. Just keep an eye on the top. It'll turn a lovey golden brown. :)
