Today I'm eating the vegan version of eggs benedict: Tofu Benedict! This recipe is seriously delicious! However, as I have never had eggs benedict before (or even hollandaise sauce, for that matter), I'm not sure how it compares. All I can say is that every single element was amazing and I could drink that vegan hollandaise sauce straight from the Vitamix jug, haha! The recipe is linked below - basically it is an English muffin topped with some fresh tomato, fresh baby spinach, pan-fried, salted tofu (I didn't use smoky tofu like the recipe states) and vegan hollandaise, topped with fresh black pepper and chives. So yummy and filling! (Oh! And I decided to include some pan-fried asparagus to the plate for extra crunch and colour.) I also had an iced coffee to wash it down. For this, I used the Califia Farms XX Espresso Cold Brew Iced Coffee (made from almond milk) with some soy-based vanilla ice cream and a sprinkle of Cadbury drinking chocolate (which, surprise surprise, is vegan!)
