In the mood for a healthy, fruity breakfast (and with some leftover strawberries lingering in the fridge), I decided to whip up a smoothie bowl recipe by one of my favourite vegan YouTubers, High Carb Hannah. To make this strawberry smoothie bowl, blend frozen banana and strawberry (using a high-speed, high-powered blender*) with a little bit of liquid (either water or plant milk) to make an ice cream-like consistency then top with fresh strawberries, buckwheat and coconut flakes. If your bananas were super ripe and spotty when you froze them you probably don’t need additional sweetness, however, feel free to add the sweetener of choice to either the blended mixture or drizzled over the top if you prefer a sweeter smoothie bowl. Maple syrup would be perfect.
