Today I’m eating an amazingly delicious bowl of Thai green curry with some white rice and flatbread. All home-made! The curry is a recipe I’ve had many times before and would highly recommend you try if you are in to Thai food or flavours. It is seriously so so good! I added green capsicum to my curry, used parsley instead of coriander as a garnish, and topped it with some freshly squeezed lime. The recipe can be found here: https://cookieandkate.com/2015/thai-g... To make the flatbread: 1 cup self-raising flour, pinch of salt, ¼ cup of canola oil, ¼–½ cup of water. Mix together until a dough forms and then knead the dough for 1–2 minutes. Divide the dough in to 4 smaller balls and roll them flat. Fry each flatbread in an oiled pan on medium to high heat for about 30 seconds to 1 minute on each side. The rice is white jasmine that was cooked on the stove using the absorption method.
