Hey guys! Today I'm eating a dish that Mr. Herbivore whipped up with the last few ingredients we had left in the fridge/freezer/pantry at the end of the week. It's a paella-inspired rice dish, using rice, corn, tomato, capsicum, vegan prawns and tofu (among other things). I've called this 'paella-inspired' because it's not an authentic paella, not even an authentic veganized version of it. Like I said, we just made do with the ingredients we had in the house. Paella purists, please don't come for me. 😜 Here's how to make it: ~Heat oil in a large frying pan. ~Dice one block of firm tofu into cubes, fry for a few minutes then sprinkle some fennel seed, salt and chili flakes into the pan. Coat the tofu then add half a chopped onion and one clove of crushed garlic. ~Add uncooked white rice to the pan and stir it through to mix everything up. Cover with boiling vegetable stock (enough to cover the rice/more on the generous side). ~Add chopped tomato and capsicum to the top of the dish. Turn heat to low, cover with lid and let the rice cook. ~After 20-30 minutes add some frozen corn and frozen vegan prawns evenly across the top of the dish. Cover again and let it cook for another 20 minutes. ~When the rice is ready, sprinkle your dish with fresh chives. As always, thank you for watching. ❤️
