We visited a Quechua community in the Ecuadorian Amazon with Gari Garces of Gary’s Tours in Tena. Gari showed us how chocolate is made – from harvesting it off the tree, roasting the cacao beans, grinding the roasted cacao beans, and finally, cooking it with water and “panela” or sugar cane to make a delicious chocolate fondue!
