Ingredients for 4 servings: • Hokkaido pumpkin (1,500 g) • 1 sweet potato (300 g) • 1 onion (80 g) • 3 garlic cloves (9 g) • Olive oil (1 tbsp, 13.5 ml) • Red lentils (200 g) • Ras el hanout (spice mix) (1 tsp, 2 g) • Vegetable broth (1,000 ml) • Natural yogurt, 3.5% fat (50 g) • Fresh cilantro (10 g) • Sumac (1 tsp, 4 g) or simply lemon • Salt and pepper (to taste) Instructions: 1. Halve the pumpkin, remove the seeds, and cut into large pieces. 2. Peel and roughly dice the sweet potato. 3. Finely chop the onion and garlic and sauté in olive oil. 4. After about 6-8 minutes, add the pumpkin, sweet potato, lentils, and ras el hanout. Sauté for about 3 minutes. 5. Add the vegetable stock and bring to a boil briefly, then reduce the heat and simmer for 15-20 minutes. 6. Transfer to a blender and puree until the desired consistency is reached. 7. Top with yogurt, chopped cilantro, sumac, salt, and pepper and serve.
