Picking summer elderflowers and making them into a delicious refreshing cordial, while relaxing in the garden. Ingredients: 1.25 kg caster sugar 1 lemon 30 elderflower heads (destalked) 40g citric acid 750ml water Method: Pour water and sugar into a pan and gentley heat without boiling. Zest the lemon and cut into rounds. Once the sugar water has become a syrup, take off the heat. Add the rest of the ingredients and leave to infuse for 24 hours. Makes 1.5 litres
