Hey guys! Today I'm eating a creamy pesto pasta that I made without a recipe. Surprise, surprise it turned out really good! I used stove-cooked rigatoni for my pasta and, for the sauce, I blended a bunch of basil with water, raw cashew nuts, garlic, lemon juice, nutritional yeast and salt. Once the pasta and sauce were mixed, I topped my dish with butter beans, a splash of Tabasco sauce and a generous helping of vegan parmesan (Follow Your Heart brand). It was a delicious and super satisfying lunch, even though I was busting at the seams by the end of it. As always, thank you for watching. ❤️
