Hey guys! Today I'm eating one of my all-time favourite dishes! It's a rice and bean salad that I 'invented' shortly after going vegan. I pretty much eat this for lunch every day, lol. I love it! The salad includes: brown rice, black beans, tomatoes, lettuce, cucumber, corn, avocado, green onion, salt, pepper, nutritional yeast, dried oregano and lemon juice. You can add any amount of a particular ingredient into your salad, depending on your preference. I tend to put one cup of beans in mine to get a good hit of protein. And sometimes I'll use chickpeas instead of black beans. As always, thank you for watching. ❤️
