Too enticing to resist, I picked up this gorgeous-looking bagel at a local market as I was doing my weekly grocery shop. It wasn’t until I got home that I realised I had no vegan cream cheese to go with it, so I whipped up a little something up in my kitchen in the order of cashew cream (cashews blended with water in a high speed blender), lemon juice, apple cider vinegar and sugar.
