For lunch today I'm enjoying this satisfying and nourishing bowl of udon noodles packed with crunchy veggies! To make the broth for this dish sauté some curry powder, garlic powder and pepper in a little oil for 20–30 seconds on medium heat. Then add sugar (to taste), soy sauce and water. (Add more sugar and water to balance the taste as desired/required.) Once the broth is ready add your lightly cooked veggies of choice (I chose carrot, red cabbage, red onion, red pepper, pak choy and garlic) and your cooked udon noodles. Mix everything together until well combined and heated through. Garnish with spring onion. As always, thank you for watching! ❤️
