Today I’m eating a tasty treat inspired by a Japanese dish called ‘yakitori’ which is cooked chicken on a skewer. ‘Yaki’ meaning cooked and ‘tori’ meaning chicken. My version is vegan so I’ve used tofu puffs instead of chicken. I guess you could call them ‘yakitofu’! To make these skewers I tossed the tofu puffs in a sweet teriyaki-style sauce (soy sauce, water, sugar, corn starch) to coat them and heat them through and then paired them with some fresh green and red capsicum (peppers) and some lightly seared onion.
