Hey guys! Today I'm eating a homemade vegan meatball sub with plain potato chips and chocolate soy milk. On my sub sandwich I have vegan meatballs, vegan mozzarella, a tomato sauce and fresh green onion and I used a baguette style bread. (Note: next time I would opt for a thinner/squishier bread as this was quite large and dense/hard to chew at times. Maybe it was just a little stale?) To make the vegan meatballs I used plant-based 'mince' by the brand Funky Fields (available from Woolworths Australia) mixed with nutritional yeast, garlic powder, cayenne pepper and a bit of soy sauce. Once it was all seasoned, I formed the 'mince' into balls and fried them in oil until they were nice and brown and cooked. The tomato sauce was a mix of onion, garlic, tomato, salt, sugar and chili flakes cooked on the stove. For the 'cheese' I melted a pack of Follow Your Heart vegan mozzarella shreds.
