Today I'm eating what I would call a vegan spaghetti bolognese. Instead of using ground meat, I've used a plant-based mince by the brand Funky Fields which I pre-seasoned and cooked with some soy sauce, nutritional yeast, garlic powder, onion powder and cayenne pepper. To make the sauce, saute some garlic and onion in a little oil, add dried oregano, a touch of sugar and one can of diced tomato. Then add the vegan mince and let the sauce cook for a little while until it starts to thicken all the flavours are nicely combined. Season with salt if you like it more salty. (I find that the salt from the soy sauce in the mince mixture is enough for me.) Once the sauce is ready, add your pre-cooked spaghetti pasta and mix through. Alternatively, you could serve the sauce and pasta separately and mix it yourself in your bowl/plate. I topped my spaghetti dish with a vegan parmesan by the brand Follow Your Heart.
